Catherine Nicole Minnis age 46, a resident of Breckenridge, Missouri, passed away on Saturday, May 31, 2025, in Kansas City, Missouri.
Catherine was the daughter of Darrell Minnis and Jerri (Bearden) Spencer. She was born on July 2, 1978, in Chillicothe, Missouri. She was a graduate of Fort Osage High School, Fort Osage, Missouri. She enjoyed hunting and fishing.
Catherine is survived by her mother, Jerri Spencer, her father Darrell Minnis; one son, Briar Carpenter of Biloxi, Mississippi; three daughters, Shelbey Stringer of Buckner, Missouri, Kaitlyn Petrovich and Lillian Petrovich of Grain Valley, Missouri; and one brother, Joseph Minnis (Jessica) and his children, Ezra, Chrystal, Cash and Chloe Minnis of Blue Springs, Missouri.
Cremation was held. A Celebration of Life will be held at Simpson Park, Chillicothe, Missouri, on Saturday, June 28, 2025 from 1:00 p.m. until 5:00 p.m. Memorial contributions may be made to Catherine’s Memorial fund to be used towards her daughter’s college fund (please make checks payable to Jerri Spencer).
